Ingredients
- 2 pieces pork chops (boneless, 1 inch thick)
- 1 lb waxy potatoes, peeled and quartered
- 1 large granny smith apple
- 1 medium yellow onion, sliced into half-moons
- 3 tbsp butter
- 2 tbsp whole grain mustard
- 4 leaves fresh sage leaves (or 0.5 tsp dried)

Boil potatoes in salted water until fork-tender, about 12 minutes. Drain, then mash with 1 tbsp butter, salt, and pepper until creamy.

While potatoes cook, pat pork chops dry and season generously with salt and pepper on both sides.

Heat 1 tbsp butter in a large skillet over medium-high until foaming. Sear pork 2 minutes per side until edges brown. Transfer to a plate.

In the same skillet, add 1 tbsp butter, apple, and onion. Cook, stirring occasionally, until apples soften and onions caramelize, about 6 minutes.
