Ingredients

  • 2 pieces pork chops (boneless, 1 inch thick)
  • 1 lb waxy potatoes, peeled and quartered
  • 1 large granny smith apple
  • 1 medium yellow onion, sliced into half-moons
  • 3 tbsp butter
  • 2 tbsp whole grain mustard
  • 4 leaves fresh sage leaves (or 0.5 tsp dried)

Instructions

    Boil potatoes in salted water until fork-tender, about 12 minutes. Drain, then mash with 1 tbsp butter, salt, and pepper until creamy.

    While potatoes cook, pat pork chops dry and season generously with salt and pepper on both sides.

    Heat 1 tbsp butter in a large skillet over medium-high until foaming. Sear pork 2 minutes per side until edges brown. Transfer to a plate.

    In the same skillet, add 1 tbsp butter, apple, and onion. Cook, stirring occasionally, until apples soften and onions caramelize, about 6 minutes.

    Stir in mustard and sage. Return pork to pan and coat with the apple-onion mixture. Warm 1 minute, tasting and adjusting seasoning.

    Divide mashed potatoes between plates. Top with pork and apple-onion sauce. Serve immediately.
