Ingredients
- 2 whole yellow onions, large
- 2 tbsp olive oil
- ½ cup Parmesan cheese, finely grated
- 1 clove garlic, minced
- 1 pinch salt and black pepper

Preheat oven to 425°F. Line a sheet pan with parchment paper.

Slice onions paper-thin, ideally with a mandoline, or use a sharp knife.

Toss onion slices with olive oil, salt, and pepper; spread in a single layer on the pan.

Roast for 12–14 minutes, stirring halfway through, until edges begin to brown and curl.

Remove from oven. Immediately toss with Parmesan and garlic while still hot.

Spread back on pan for 1 minute to crisp, then transfer to a plate and serve warm.
