Ingredients
- 12 oz fresh egg noodles (or ramen noodles, cooked + drained)
- 3 cups cabbage, chopped into 1-inch pieces
- 1 medium carrot, julienned
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 4 cloves garlic, minced
- 2 pieces scallion, sliced thin (for garnish)

Heat 2 tbsp oil in a large skillet over high heat until it shimmers, about 90 seconds.

Add garlic and cook 30 seconds until fragrant, stirring constantly so it doesn't burn.

Add cooked noodles and spread flat. Let them sit undisturbed for 2 minutes to crisp up on the bottom.

Toss noodles with a spatula, breaking up clumps. Add cabbage and carrot; stir-fry 3 minutes until vegetables soften.
