Ingredients
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1 whole egg
- ½ cup sour cream or Greek yogurt
- ½ cup jam or fruit preserves (prune, plum, or raspberry)
- ½ cup powdered sugar

Mix flour, baking powder, and a pinch of salt in a bowl.

Whisk egg, sour cream, and 2 tbsp sugar until smooth. Fold into flour mixture until a soft dough forms.

Heat 2 inches of neutral oil in a heavy pot to 350°F, using a thermometer to check. Temperature is critical.

Spoon 1.5-inch dough balls into hot oil. Fry 90 seconds per side until puffed and golden brown, then drain on paper towels.

Once cool enough to handle, poke a hole in the side with a skewer and pipe jam inside using a pastry bag or spoon.
