  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup ice water
  • 2 quarts vegetable oil for frying
  • 4 whole large yellow onions
  • ½ tsp salt for seasoning

Instructions

    Cut onions into 0.5-inch thick rings and separate them from the core.

    In a large bowl, whisk together flour, cornstarch, baking powder, salt, pepper, and paprika.

    Pour ice water into the dry mixture and stir until a smooth, thick batter forms. Do not overmix.

    Heat oil to 350°F in a deep fryer or heavy-bottomed pot, using a thermometer to monitor temperature.

    Working in batches, dip onion rings into batter, coating completely, and carefully place into hot oil.
