Ingredients

  • 3 whole yellow onions, large
  • 3 tbsp butter
  • 2 whole garlic cloves, minced
  • ¾ cup Parmesan cheese, finely grated
  • ¼ tsp black pepper
  • ½ tsp sea salt
  • 1 tsp fresh thyme leaves (optional)

Instructions

  1. 1

Preheat oven to 400°F. Line a sheet pan with parchment paper.

  2. 2

Slice onions into paper-thin rounds, keeping the natural rings intact.

  3. 3

Melt butter with minced garlic in a small bowl. Toss onions with this mixture, salt, and pepper until evenly coated.

  4. 4

Spread onions in a single layer on the sheet pan. Sprinkle Parmesan and thyme evenly across the top.

  5. 5

Roast for 12–15 minutes, stirring halfway through, until edges curl and turn deep golden brown.

  6. 6

Remove from oven and let cool 2 minutes on the pan—they'll crisp more as they cool. Serve immediately.
