Ingredients

  • 10 oz cremini mushrooms
  • 6 oz shiitake mushrooms
  • ¾ cup ricotta cheese
  • 4 slices crusty bread (sourdough or baguette)
  • ½ whole lemon
  • 1 tbsp fresh thyme
  • ¼ tsp red pepper flakes
  • ¼ cup gruyère or parmesan, grated

Instructions

    Whip ricotta with half the lemon juice, a pinch of salt, and a crack of pepper until fluffy, ~1 minute.

    Slice cremini and shiitake mushrooms 1/4-inch thick, discarding shiitake stems.

    Heat olive oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Add mushrooms and cook without stirring for 3 minutes until edges brown, then toss and cook 2 minutes until golden.

    Stir in thyme and remaining lemon juice, then season with salt and pepper. Remove from heat.

    Toast bread until golden, spread ricotta on each slice, top with mushrooms, grated cheese, and a pinch of red pepper flakes. Serve immediately.
