Ingredients
- 2 cups arborio rice, cooked and cooled
- 2 oz spaghetti
- 4 oz fresh mozzarella di bufala, cut into 4 small cubes
- ¼ cup parmesan cheese, grated
- 1 large egg
- ½ cup panko breadcrumbs
- 2 cups neutral oil for frying

Boil spaghetti in salted water until al dente, about 8 minutes. Drain and cut into 1-inch pieces.

Mix cooled rice, cooked spaghetti, parmesan, and a pinch of salt until evenly combined.

Wet your hands, grab a handful of rice (about 3 tbsp), press a mozzarella cube into the center, then form into an egg shape. Repeat to make 4 balls.

Beat the egg in one bowl. Pour panko into another. Roll each ball in egg, then panko, coating evenly.

Heat oil in a skillet to 350°F (a breadcrumb sizzles immediately). Fry balls 3–4 minutes, turning once, until golden on all sides.
