Ingredients

  • 2 cups arborio rice, cooked and cooled
  • 2 oz spaghetti
  • 4 oz fresh mozzarella di bufala, cut into 4 small cubes
  • ¼ cup parmesan cheese, grated
  • 1 large egg
  • ½ cup panko breadcrumbs
  • 2 cups neutral oil for frying

Instructions

    Boil spaghetti in salted water until al dente, about 8 minutes. Drain and cut into 1-inch pieces.

    Mix cooled rice, cooked spaghetti, parmesan, and a pinch of salt until evenly combined.

    Wet your hands, grab a handful of rice (about 3 tbsp), press a mozzarella cube into the center, then form into an egg shape. Repeat to make 4 balls.

    Beat the egg in one bowl. Pour panko into another. Roll each ball in egg, then panko, coating evenly.

    Heat oil in a skillet to 350°F (a breadcrumb sizzles immediately). Fry balls 3–4 minutes, turning once, until golden on all sides.

    Transfer to a paper towel. Cool for 1 minute before eating—the filling is molten.
