Ingredients

  • 2 whole bolillo rolls (or crusty rolls)
  • ¾ cup refried beans
  • 1 cup shredded Oaxaca or mozzarella cheese
  • ¼ cup jalapeños, sliced (optional)
  • ½ cup sour cream for serving

Instructions

    Halve the bolillo rolls lengthwise. Arrange cut-side up on a broiler tray.

    Spread 3 tbsp refried beans on each roll half, pressing gently into the bread.

    Divide cheese evenly over the beans, then scatter jalapeños on top if using.

    Broil 4 inches from heat until cheese melts and edges char slightly, 3-4 minutes.

    Remove from broiler. Serve hot with sour cream for dipping.
