Ingredients

  • 4 tortillas corn tortillas
  • 3 tablespoons vegetable oil
  • 1 whole jalapeño
  • 4 whole eggs
  • ¾ cup shredded cheddar or Oaxaca cheese
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

    Stack the 4 corn tortillas, then cut them in half, then cut each half lengthwise into strips about 1/4-inch wide, like cutting french fries. You'll end up with roughly 32 strips.

    Cut the jalapeño lengthwise in half, remove the white seeds and pale flesh inside with a small spoon, then slice each half crosswise into thin semicircles about 1/8-inch thick.

    Crack the 4 eggs into a small bowl, add 0.25 teaspoon salt and 0.125 teaspoon black pepper, then whisk with a fork until the yolk and white are completely combined and the mixture looks uniform yellow, about 30 seconds.

    Pour 3 tablespoons vegetable oil into a 10-inch or larger skillet and set the heat to medium-high. Heat until the oil shimmers and moves quickly when you tilt the pan, about 2 minutes.

    Add all the tortilla strips to the hot oil. Stir constantly with a wooden spoon, scraping from the bottom, until the strips are golden brown and crispy on the edges, about 4 minutes. You should hear them crackling.

    Pour the whisked eggs directly into the skillet with the tortilla strips. Stir constantly, pushing the cooked egg from the edges toward the center, until the egg is scrambled and no liquid remains, about 2 minutes.

    Reduce the heat to medium. Scatter the sliced jalapeños across the top, then scatter the 0.75 cup shredded cheese evenly over everything. Stop stirring and let the cheese melt without moving the pan, about 1 minute.

    Remove the skillet from heat. Stir once or twice just to combine the melted cheese throughout, then divide between two plates and serve immediately.
