Ingredients
- 3 large egg whites
- 6 tbsp granulated sugar
- ½ cup heavy cream
- 8 oz fresh strawberries
- 4 oz fresh red currants
- ½ tsp cornstarch

Preheat oven to 250°F. Line a sheet pan with parchment paper.

Add egg whites to a clean bowl. Beat on medium-high until soft peaks form, ~2 minutes.

Sprinkle sugar over whites. Beat until stiff peaks form and mixture looks glossy, ~3 minutes.

Fold in cornstarch gently with a spatula until just combined.

Spoon 4 meringue nests (about 3 inches wide) onto the sheet pan, creating a well in the center of each.

Bake until dry and crispy but still pale, 12–14 minutes. Cool on the pan for 2 minutes.
