Ingredients

  • 3 large egg whites
  • 75 g granulated sugar
  • 100 g white chocolate bar
  • 200 g fresh berries (blueberries, strawberries, raspberries)
  • 4 medium fresh apricots
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • 1 tsp cornstarch

Instructions

    Halve the apricots, remove pits, and toss with honey on a small baking sheet. Roast at 400°F for 8 minutes until caramelized.

    Line a baking sheet with parchment. In a clean bowl, whisk egg whites until stiff peaks form, about 3 minutes by hand.

    Gradually add sugar while whisking. Fold in vanilla and cornstarch until smooth and glossy, ~1 minute.

    Spoon 4 meringue mounds onto parchment. Use the back of a spoon to create shallow nests with raised edges.

    Bake at 250°F for 15 minutes until pale and crispy but still chewy inside. Cool on the pan 5 minutes.

    Chop white chocolate coarsely. Divide nests among plates, fill with berries and roasted apricots, scatter chocolate shards on top.
