Ingredients
- 3 large egg whites
- 75 g granulated sugar
- 100 g white chocolate bar
- 200 g fresh berries (blueberries, strawberries, raspberries)
- 4 medium fresh apricots
- 1 tbsp honey
- ½ tsp vanilla extract
- 1 tsp cornstarch

Halve the apricots, remove pits, and toss with honey on a small baking sheet. Roast at 400°F for 8 minutes until caramelized.

Line a baking sheet with parchment. In a clean bowl, whisk egg whites until stiff peaks form, about 3 minutes by hand.

Gradually add sugar while whisking. Fold in vanilla and cornstarch until smooth and glossy, ~1 minute.

Spoon 4 meringue mounds onto parchment. Use the back of a spoon to create shallow nests with raised edges.
