Ingredients

  • 1 cup masa harina (corn flour)
  • ¾ cup water
  • 1 can (15 oz) refried beans
  • 1 cup shredded Oaxaca or mozzarella cheese
  • ¼ cup crema or sour cream
  • ¼ cup fresh cilantro, finely chopped

Instructions

    Mix masa harina with 0.75 cup warm water until you have a soft, pliable dough. Rest 2 minutes.

    Warm refried beans in a small bowl or directly in a skillet over medium heat, 3–4 minutes.

    Shape a golf-ball-size piece of dough into a flat disc, then pinch up the edges to form a shallow cup.

    Heat 0.5 inch oil in a 10-inch skillet over medium-high until a small piece of dough sizzles immediately.

    Fry each masa cup 2–3 minutes per side until golden and crispy. Drain on paper towels.
