Ingredients

  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • ¾ cup coconut milk
  • 2 cups neutral oil (for frying)
  • ½ cup powdered sugar
  • ¼ cup unsweetened shredded coconut, toasted

Instructions

    Mix flour, baking powder, and a pinch of salt in a bowl. Pour coconut milk in gradually, stirring until a soft dough forms.

    Knead the dough on a floured surface for 2 minutes until smooth and slightly elastic. Let it rest 3 minutes.

    Roll dough 0.25-inch thick. Cut into 2-inch diamond or square shapes with a knife.

    Heat oil in a deep skillet to 350°F. Test with a dough scrap—it should sizzle immediately and float.

    Fry mandazi 60-90 seconds per side until puffed and golden brown. Transfer to a paper-towel-lined plate.
