Ingredients

  • ½ lb ground pork
  • ¼ lb shrimp, chopped
  • 12 pieces lumpia wrapper (spring roll wrappers)
  • ½ cup fried shallots (crispy fried onions)
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp ketchup (sweetener + tang)
  • ¼ tsp white pepper
  • ¼ cup ketchup
  • 1 tbsp white vinegar
  • 1 tbsp sriracha or chili sauce

Instructions

    Brown ground pork in a skillet over medium-high heat, breaking into small pieces, until cooked through, ~5 minutes.

    Add shrimp, garlic, soy sauce, ketchup, and white pepper. Stir for 90 seconds until shrimp turn opaque and fragrant.

    Fold in fried shallots and transfer filling to a plate to cool, ~2 minutes.

    Fill each lumpia wrapper with 1.5 tbsp filling near one corner, leaving space at edges. Fold and roll tightly, sealing the seam with water.

    Spray lumpia with cooking oil on all sides. Air-fry at 380°F for 8–10 minutes, shaking halfway through, until deep golden and crispy.

    Whisk ketchup, vinegar, and sriracha for the dipping sauce. Serve lumpia hot with sauce on the side.
