Ingredients
- ¾ cup red lentils, rinsed
- 1 medium yellow onion, finely diced
- 1 tbsp fresh ginger, minced
- 1.5 tsp garam masala
- ½ tsp turmeric
- 8 sheets phyllo dough sheets
- 2 tbsp honey
- ¼ cup fresh mint, chopped

Boil lentils in salted water until completely soft, about 12 minutes. Drain and set aside.

Heat 1 tbsp oil in a skillet over medium. Sauté onion until golden, about 4 minutes.

Stir in ginger, garam masala, and turmeric until fragrant, about 1 minute. Add cooked lentils and mix well.

Cut phyllo sheets in half lengthwise. Lay one strip, brush lightly with oil, add 1 tbsp lentil filling at the corner.

Fold phyllo into triangles, tucking edges. Repeat with remaining phyllo and filling until 8 samosas are formed.

Heat 0.5 inch oil in skillet over medium-high until shimmering. Fry samosas 2–3 minutes per side until golden and crispy.
