Ingredients
- 1.5 lb leeks, white and light green parts, sliced into 1/2-inch rounds
- 3 tbsp butter
- 1 cup Gruyère cheese, shredded
- 4 sheets phyllo sheets, thawed
- 1 tbsp Dijon mustard
- 1 tsp fresh thyme leaves

Heat 2 tbsp butter in a 10-inch oven-safe skillet over medium-high. Add leeks, salt, and pepper; stir occasionally until golden and soft, 8–10 minutes.

Stir in mustard and thyme. Spread leeks evenly. Scatter Gruyère across the top.

Melt remaining 1 tbsp butter. Brush one phyllo sheet with melted butter, lay it on the leeks. Repeat with remaining 3 sheets, brushing each.

Brush the top phyllo layer with remaining butter. Transfer skillet to a 400°F oven and bake until golden brown, 8–10 minutes.
