Ingredients

  • 1.5 lb leeks, white and light green parts, sliced into 1/2-inch rounds
  • 3 tbsp butter
  • 1 cup Gruyère cheese, shredded
  • 4 sheets phyllo sheets, thawed
  • 1 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves

Instructions

  1. 1

Heat 2 tbsp butter in a 10-inch oven-safe skillet over medium-high. Add leeks, salt, and pepper; stir occasionally until golden and soft, 8–10 minutes.

  2. 2

Stir in mustard and thyme. Spread leeks evenly. Scatter Gruyère across the top.

  3. 3

Melt remaining 1 tbsp butter. Brush one phyllo sheet with melted butter, lay it on the leeks. Repeat with remaining 3 sheets, brushing each.

  4. 4

Brush the top phyllo layer with remaining butter. Transfer skillet to a 400°F oven and bake until golden brown, 8–10 minutes.

  5. 5

Remove from oven. Let cool 2 minutes, then slice into wedges and serve hot.
