Ingredients

  • 1 lb ground lamb
  • ¼ cup red onion, finely minced
  • ½ cup fresh parsley and mint, finely chopped
  • 1.5 tsp cumin and coriander
  • ½ cup tahini
  • 1 whole lemon (juiced)

Instructions

    Mix lamb, onion, parsley, mint, cumin, coriander, 0.5 tsp salt, and a pinch of pepper in a bowl until just combined.

    Form into 8 long patties or logs. Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

    Sear kofta 3–4 minutes per side without moving until golden brown and cooked through. Work in batches if needed.

    Whisk tahini with lemon juice, 2 tbsp water, 1 minced garlic clove, and a pinch of salt until pourable.

    Arrange kofta on a plate. Drizzle tahini sauce over the top and serve with warm pita and fresh herbs.
