Ingredients
- 1 lb ground lamb
- ¼ cup red onion, finely minced
- ½ cup fresh parsley and mint, finely chopped
- 1.5 tsp cumin and coriander
- ½ cup tahini
- 1 whole lemon (juiced)

Mix lamb, onion, parsley, mint, cumin, coriander, 0.5 tsp salt, and a pinch of pepper in a bowl until just combined.

Form into 8 long patties or logs. Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

Sear kofta 3–4 minutes per side without moving until golden brown and cooked through. Work in batches if needed.

Whisk tahini with lemon juice, 2 tbsp water, 1 minced garlic clove, and a pinch of salt until pourable.
