Ingredients
- 6 slices bacon, chopped
- 1 lb potatoes, diced small
- 1 medium yellow onion, diced
- 4 large eggs

Cook bacon in a 12-inch skillet over medium heat until crispy, about 6 minutes. Transfer to a plate.

Add potatoes and onion to the bacon fat in the skillet. Cook without stirring for 4 minutes until edges start to crisp.

Stir the potatoes and onions. Cook another 4 minutes until golden brown and tender.
