Ingredients

  • 6 slices bacon, chopped
  • 1 lb potatoes, diced small
  • 1 medium yellow onion, diced
  • 4 large eggs

Instructions

    Cook bacon in a 12-inch skillet over medium heat until crispy, about 6 minutes. Transfer to a plate.

    Add potatoes and onion to the bacon fat in the skillet. Cook without stirring for 4 minutes until edges start to crisp.

    Stir the potatoes and onions. Cook another 4 minutes until golden brown and tender.

    Return bacon to the skillet. Stir to combine.

    Make four wells in the hash. Crack an egg into each well. Cover the skillet and cook until whites set, about 3 minutes.

    Season with salt and pepper. Serve immediately straight from the skillet.
