Ingredients
- 1.5 cups deli ham, finely diced
- 3 tbsp butter
- 3 tbsp all-purpose flour
- ¾ cup whole milk
- 1 large eggs
- 1 cup panko breadcrumbs
- 2 cups neutral oil for frying

Melt butter in a skillet over medium heat, then add flour and stir for 90 seconds until it smells nutty and looks light brown.

Pour milk in slowly while stirring constantly to avoid lumps. Cook for 2 minutes until thick and smooth, then fold in diced ham.

Spread the ham mixture on a plate and refrigerate for 10 minutes until cool enough to handle.

Scoop the mixture into 12 golf-ball-sized portions and shape each one into a cylinder about 2 inches long.
