Ingredients

  • 8 oz halloumi cheese, sliced 1/2-inch thick
  • 2 oz pita bread, cut into 2-inch triangles
  • 4 cups romaine or mixed greens, chopped
  • 1 medium cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • 1 whole lemon (juiced + zested)
  • 1 tsp sumac or dried oregano

Instructions

    Toss pita triangles with a pinch of salt and olive oil on a sheet pan.

    Bake pita chips at 400°F until golden and crisp, about 8–10 minutes. Set aside.

    Pat halloumi slices dry. Heat 1 tbsp olive oil in a skillet over medium-high until shimmering.

    Pan-fry halloumi 2–3 minutes per side until edges are golden and crispy. Don't move it.

    Toss greens, cucumber, and tomatoes in a large bowl. Drizzle with lemon juice, olive oil, salt, and pepper; toss gently.

    Transfer salad to plates, top with crispy halloumi and pita chips, then sprinkle sumac and lemon zest.
