Ingredients
- 8 oz halloumi cheese, sliced 1/2-inch thick
- 2 oz pita bread, cut into 2-inch triangles
- 4 cups romaine or mixed greens, chopped
- 1 medium cucumber, diced
- 1.5 cups cherry tomatoes, halved
- 1 whole lemon (juiced + zested)
- 1 tsp sumac or dried oregano

Toss pita triangles with a pinch of salt and olive oil on a sheet pan.

Bake pita chips at 400°F until golden and crisp, about 8–10 minutes. Set aside.

Pat halloumi slices dry. Heat 1 tbsp olive oil in a skillet over medium-high until shimmering.
