Ingredients

  • 100 g store-bought grissini (thin breadsticks)
  • ¾ cup whole milk ricotta
  • ½ whole lemon
  • 1 cup fresh microgreens (or arugula)
  • 4 slices sliced baguette
  • 3 tbsp olive oil (divided)

Instructions

    Heat oven to 400°F. Lightly brush grissini with 1 tbsp olive oil and a pinch of salt.

    Spread on a sheet pan and bake until deeply golden and crispy, 8–10 minutes.

    Whisk ricotta with juice from half a lemon, salt, and pepper until light and airy.

    Toss microgreens with remaining 2 tbsp olive oil, a squeeze of lemon, salt, and pepper.

    Transfer grissini to a board. Dollop ricotta on the side, pile greens on top, and arrange baguette slices nearby.
