Ingredients

  • ¾ lb ground beef (80/20)
  • ¼ cup glutinous rice flour
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp granulated sugar
  • 2 stalks green onion, chopped (plus sesame seeds for garnish)

Instructions

    Mix gochujang, soy sauce, sesame oil, and sugar in a small bowl until smooth.

    Combine ground beef and rice flour in a large bowl, stirring gently until just incorporated.

    Divide beef mixture into 4 equal portions and form into thick patties about 3 inches wide.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear patties 3 minutes per side without moving until edges brown and surface caramelizes.

    Brush both sides with gochujang glaze, return to skillet, cook 1 minute per side until sticky.

    Plate patties and garnish with green onion and sesame seeds. Serve hot with rice.
