Ingredients
- 1 lb chicken breast, cut into 1-inch cubes
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- ½ tsp red pepper flakes
- 2 cups cooked rice (white or jasmine)
- 1 of each cucumber, sliced + tomato, sliced (for serving)

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add chicken and cook, stirring occasionally, until golden and cooked through, 6–7 minutes.

Whisk soy sauce, vinegar, sugar, and red pepper flakes together, then pour over chicken.

Stir and cook until sauce becomes glossy and coats the chicken, about 2 minutes.

Push chicken to one side and add 2 cups cooked rice to the pan, stirring to warm and lightly toast, 2 minutes.

Divide rice into bowls, top with crispy chicken and sauce, and serve with sliced cucumber and tomato on the side.
