Ingredients

  • 4 pieces (about 1.5 lbs) chicken thighs, bone-in skin-on
  • 6 cloves garlic cloves, minced
  • ¼ cup sambal oelek or similar chili paste
  • 1 whole limes
  • ½ cup (loosely packed) fresh Thai basil or regular basil
  • 2 tbsp soy sauce
  • ½ cup neutral oil (for frying)

Instructions

    Pat chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Fry chicken skin-side down until golden and crispy, about 8 minutes. Do not move it.

    Flip and cook another 6 minutes until cooked through and skin is deep golden-brown.

    Push chicken to the side of the skillet. Add minced garlic to the oil, stir constantly until fragrant, about 60 seconds.
