Ingredients

  • ½ lb ground pork
  • ¼ lb shrimp, finely chopped
  • 3 tbsp green onion, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 24 wrappers wonton wrappers
  • ½ cup ketchup
  • ¼ cup rice vinegar
  • ¼ cup sugar

Instructions

  1. 1

Combine ground pork, shrimp, green onion, soy sauce, sesame oil, and garlic in a bowl. Mix until just combined.

  2. 2

Lay one wonton wrapper on a dry surface. Add 1 tsp filling to center.

  3. 3

Wet all four edges with water using your finger. Fold in half to form a triangle, pressing to seal.

  4. 4

Bring the two outer corners together, overlapping slightly, and pinch to seal. Repeat with remaining wrappers.

  5. 5

Whisk ketchup, rice vinegar, and sugar in a small bowl until sugar dissolves. Set sauce aside.

  6. 6

Fill a deep pot or wok with 3 inches of neutral oil. Heat to 350°F, checking with a thermometer.

  7. 7

Carefully slide 6–8 wontons into hot oil. Do not crowd the pot. Fry until golden brown, turning once, ~3–4 minutes total.

  8. 8

Remove wontons with a slotted spoon and drain on a paper towel–lined plate. Repeat in batches.

  9. 9

Arrange fried wontons on a serving platter. Serve immediately with sweet and sour sauce for dipping.
