  • 1 lb white fish fillets
  • ½ cup all-purpose flour
  • 1 large egg
  • 1 cup panko breadcrumbs
  • ½ cup vegetable oil
  • 2 cups lettuce
  • 1 cup cherry tomatoes
  • 2 cups cooked rice

    Pat the 1 lb fish fillets dry and season both sides with salt and pepper. Set up three shallow bowls: 0.5 cup flour, 1 beaten egg, and 1 cup panko breadcrumbs.

    Dredge each fillet in flour, then dip in egg, then coat with panko, pressing gently so the crumbs stick. Place the coated fillets on a plate.

    Heat 0.5 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. The oil should sizzle when a crumb is dropped in.

    Fry the fish in batches without crowding, cooking until golden brown and crisp, about 3-4 minutes per side. The fish should flake easily with a fork when done.
