Ingredients
- 4 whole (about 1.5 lbs total) boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1.5 tsp paprika
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- 3 cups vegetable oil for frying
- 2 cups all-purpose flour
- 1.75 cups buttermilk
- 2 large egg
- 4 tbsp butter, melted
- ½ cup maple syrup

Dredge each chicken breast in seasoned flour, coating both sides. Place on a plate.

Whisk together flour, baking powder (2 tsp), baking soda (0.5 tsp), and salt (0.5 tsp).

In another bowl, whisk buttermilk, eggs, and melted butter until smooth.

Fold wet ingredients into dry just until combined. A few lumps are fine—do not overmix.

Heat oil in a deep skillet or Dutch oven to 350°F using a thermometer. Test with a flour pinch—it should sizzle immediately.
