Ingredients

  • 4 whole (about 1.5 lbs total) boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1.5 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper
  • 3 cups vegetable oil for frying
  • 2 cups all-purpose flour
  • 1.75 cups buttermilk
  • 2 large egg
  • 4 tbsp butter, melted
  • ½ cup maple syrup

Instructions

    Pat chicken breasts dry with paper towels. Season both sides generously with salt and black pepper.

    Mix flour, paprika, garlic powder, cayenne, and 1 tsp salt in a shallow bowl.

    Dredge each chicken breast in seasoned flour, coating both sides. Place on a plate.

    Whisk together flour, baking powder (2 tsp), baking soda (0.5 tsp), and salt (0.5 tsp).

    In another bowl, whisk buttermilk, eggs, and melted butter until smooth.

    Fold wet ingredients into dry just until combined. A few lumps are fine—do not overmix.

    Heat oil in a deep skillet or Dutch oven to 350°F using a thermometer. Test with a flour pinch—it should sizzle immediately.

    Carefully add chicken breasts to hot oil. Fry 6–7 minutes per side until golden brown and internal temp reaches 165°F.

    Transfer chicken to a paper towel-lined plate. Let cool slightly.

    Preheat waffle iron. Lightly butter the plates. Pour 0.75 cup batter onto each waffle iron. Cook until edges release easily and exterior is golden, about 4–5 minutes.

    Gently remove waffles and keep warm on a plate.

    Warm maple syrup in a small saucepan with 2 tbsp butter over low heat until melted together, about 1 minute. Stir once.
