- 1 cup buttermilk
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 tsp paprika
- 1 tsp garlic powder
- 2 cup vegetable oil
- ½ cup mayonnaise
Instructions
- 1
In a large bowl, soak the 2 lb chicken pieces in 1 cup buttermilk for at least 30 minutes, or up to overnight in the fridge.
- 2
In a shallow dish, whisk together 1 cup flour, 1/2 cup cornstarch, 1 tsp paprika, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper.
- 3
Heat 2 cups vegetable oil in a deep skillet over medium-high until shimmering, about 350°F (a pinch of flour sizzles immediately).
- 4
Dredge each chicken piece in the flour mixture, pressing to coat well. Shake off excess.
- 5
Fry chicken in batches, without crowding, turning occasionally, until golden brown and cooked through (internal temp 165°F), about 12-15 minutes. Drain on paper towels.
- 6
In a small bowl, mix 1/2 cup mayonnaise with 1 tbsp lemon juice and 1 tsp chili flakes (optional). Serve with chicken and lemon wedges.
