Ingredients

  • 2 pieces pita bread (2 large)
  • ¾ lb ground lamb
  • 1 cup plain yogurt
  • 1.5 tsp cumin, coriander, paprika (spice blend)
  • 4 cloves garlic cloves (minced)
  • 4 tbsp olive oil
  • 2 tbsp pomegranate molasses or red wine vinegar

Instructions

  1. 1

Cut pita into rough 2-inch pieces. Toast in a dry skillet over medium-high heat, stirring often, until golden and crisp, ~4 minutes. Transfer to a plate.

  2. 2

Return skillet to heat with 1 tbsp oil. Add ground lamb, breaking it up with a spoon, and cook until browned, ~6 minutes. Stir in spice blend, garlic, and a pinch of salt.

  3. 3

Cook garlic 30 seconds until fragrant. Remove from heat and stir in pomegranate molasses.

  4. 4

Stir yogurt with 1 minced garlic clove and a pinch of salt in a bowl until smooth.

  5. 5

Spread yogurt mixture on a plate or shallow bowl. Top with crispy pita pieces, then spiced lamb.

  6. 6

Heat remaining 3 tbsp oil in the skillet until just smoking, ~60 seconds. Drizzle over the fattah and serve immediately.
