Ingredients
- 4 slices sourdough bread
- 1 whole ripe avocado
- 2 whole eggs
- 2 tbsp butter
- 2 tbsp honey
- ¼ tsp red pepper flakes
- ½ whole lemon

Toast sourdough slices in a skillet over medium-high heat until golden and crispy, about 2 minutes per side.

Halve the avocado, remove the pit, and scoop into a bowl. Mash with a fork, salt, and pepper to taste.

Heat 1 tbsp butter in the skillet over medium-high until foaming. Crack both eggs in and fry 3–4 minutes until whites set but yolks still jiggle.

Spread mashed avocado evenly on all toast slices. Squeeze lemon juice over the top.

Top two slices with a fried egg each. Warm honey and red pepper flakes in a small bowl, then drizzle over eggs.
