Ingredients

  • 8 count jumbo shrimp, peeled and deveined
  • ¾ cup panko breadcrumbs
  • ¼ cup all-purpose flour
  • 1 large egg
  • ½ cup mayonnaise
  • 1 tbsp wasabi paste
  • ½ bunch radish, thinly sliced

    Pat shrimp dry and season lightly with salt and pepper.

    Whisk egg in one bowl. Mix flour in a second bowl, panko in a third.

    Coat each shrimp in flour, then egg, then panko, pressing gently so crumbs stick.

    Heat 2 inches of neutral oil in a heavy skillet to 350°F. Oil should shimmer steadily.

    Fry shrimp in batches 90 seconds per side until golden and crispy. Don't crowd the pan.

    Stir wasabi into mayo. Serve shrimp alongside sliced radish and wasabi mayo for dipping.
