Ingredients

  • 1 cup all-purpose flour
  • ¾ cup water
  • 4 whole eggs
  • ½ cup scallions, chopped
  • 3 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

    Whisk flour and water until smooth. Let rest 5 minutes while you prep.

    Heat a nonstick or well-seasoned skillet over medium-high until a drop of water sizzles.

    Pour 1/4 cup batter in the center, then tilt and swirl the pan to spread into a thin crepe.

    Cook until the bottom is golden and edges lift, about 1 minute, then flip.
