Ingredients

  • 2.5 lbs pork ribs (costillas), bone-in
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 whole lime
  • 12 whole fresh corn tortillas
  • ½ whole white onion, thinly sliced
  • ¼ cup fresh cilantro, chopped

Instructions

    Pat pork ribs dry with paper towels. Season generously with salt, pepper, and garlic powder on all sides.

    Arrange ribs on a foil-lined baking sheet, bone side down. Squeeze juice from 1 lime over the ribs.

    Roast at 425°F for 30 minutes until edges caramelize and meat pulls back from bones slightly.

    Remove from oven and let cool 5 minutes until cool enough to handle.

    Pull meat from bones with two forks, shredding into bite-sized pieces. Discard bones.

    Warm tortillas in a dry skillet over medium heat, 20 seconds per side, until pliable and fragrant.

    Fill each tortilla with shredded pork. Top with sliced onion and cilantro.

    Serve with lime wedges on the side.
