Ingredients

  • 6 count corn tortillas
  • 6 oz chorizo, casings removed
  • ¾ cup refried beans
  • ⅓ cup sour cream
  • 1 count lime (juiced)
  • ⅓ cup cotija cheese, crumbled

Instructions

    Heat a large skillet over medium-high. Toast each tortilla 60 seconds per side until lightly charred and crispy. Transfer to a plate.

    In the same skillet, brown chorizo, breaking it into small pieces with a spoon, until no pink remains, about 5 minutes.

    Warm refried beans in a small bowl or the skillet's edge for 1 minute, stirring. Stir sour cream and lime juice together until smooth.

    Spread 2 tablespoons refried beans on each crispy tortilla. Top with chorizo and a drizzle of lime crema.

    Sprinkle cotija cheese, fresh cilantro, diced white onion, and jalapeño slices if desired. Serve immediately.
