Ingredients
- 4 whole corn tortillas
- 6 oz chorizo sausage, removed from casing
- ¾ cup shredded oaxaca or mozzarella cheese
- 1 whole lime (juiced)
- ¼ cup cotija cheese, crumbled
- ¼ cup fresh cilantro, chopped

Heat oil in a large skillet over medium-high. When shimmering, lay tortillas one at a time and cook 30 seconds per side until charred and crispy. Transfer to a plate.

In the same skillet, cook chorizo over medium-high, breaking it up with a spoon, until browned and crispy, about 5 minutes.

Top each crispy tortilla with shredded oaxaca cheese, then spoon chorizo on top.

Return topped tortillas to the skillet and cook 1–2 minutes until cheese melts, working in batches if needed.
