Ingredients
- 1.5 lbs boneless chicken thighs
- ½ cup natural peanut butter (no sugar added)
- 3 tbsp soy sauce
- 1 whole lime (juiced + zested)
- 3 whole garlic cloves (minced)
- 1 tbsp sriracha or chili paste

Pat chicken dry. Toss with 1 tbsp oil, salt, and pepper. Spread on a sheet pan in a single layer.

Roast at 425°F until edges brown and a thermometer reads 165°F at the thickest point, 12–14 minutes.

While chicken cooks, whisk peanut butter, soy sauce, lime juice and zest, garlic, and sriracha in a small bowl until smooth.

If sauce is thick, thin it with 2–3 tbsp water until it reaches a drizzle consistency.
