Ingredients
- 1.5 cups rotisserie chicken, shredded
- 1 cup cooked rice (white or basmati)
- 4 sheets phyllo dough sheets
- ½ cup cashew nuts, toasted and roughly chopped
- 3 tbsp butter, melted
- 1.5 tsp warm spice blend (cinnamon, allspice, cumin, cloves)

Toss shredded chicken with warm spices, salt, pepper, and half the cashews in a bowl.

Mix cooked rice into the chicken mixture until evenly combined and fragrant.

Lay one phyllo sheet flat, brush lightly with melted butter, then place 1/4 of the chicken-rice mixture along the short edge.

Roll tightly into a log, tucking in the sides as you go, then brush the outside with melted butter.

Heat 1 tbsp butter in a 12-inch skillet over medium-high until sizzling. Sear the ouzi seam-side down for 3 minutes until golden.

Flip and cook 2 more minutes until the second side is crispy. Repeat with remaining phyllo, chicken, and butter.
