Ingredients

  • 1.25 lb chicken thighs, boneless and skinless
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 tbsp mirin
  • 1 whole lemon
  • ¼ cup Japanese mayonnaise or regular mayo

Instructions

    Cut chicken thighs into 2-inch bite-size pieces. Pat dry with paper towels.

    Toss chicken with soy sauce, ginger, mirin, salt, and pepper. Let sit 5 minutes.

    Mix flour and cornstarch in a shallow bowl. Coat chicken pieces evenly.

    Preheat air fryer to 400°F. Arrange chicken in a single layer (work in batches if needed).

    Air fry 12–14 minutes until golden brown and crispy, shaking basket halfway through.
