Ingredients

  • 2 cups cooked rice (white or sushi rice)
  • 12 oz boneless, skinless chicken breasts
  • 3 tbsp soy sauce
  • 2 tbsp mirin (or honey)
  • 2 whole eggs
  • 2 tbsp green onion, sliced

    Slice chicken breasts horizontally to create thin cutlets roughly 0.5 inches thick.

    Heat 1 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Add chicken to the skillet without moving for 3 minutes until the bottom is golden and crispy.

    Flip chicken and cook 2 minutes more until cooked through. Transfer to a plate.

    Return skillet to medium, add soy sauce and mirin, swirling to combine. Crack both eggs into the sauce.

    Cover and cook 3 minutes until egg whites set but yolks still jiggle slightly.
