Ingredients
- ½ package (about 8 sheets) phyllo dough
- 300 g ground beef
- 150 g feta cheese, crumbled
- ½ medium yellow onion, minced
- 4 tbsp, divided olive oil
- 1 pinch each salt and black pepper
- 2 tbsp (optional) fresh mint or parsley, chopped

Preheat oven to 400°F. Line a sheet pan with parchment paper.

Brown ground beef in a large skillet over medium-high, breaking it apart with a spoon, until no pink remains, about 5 minutes.

Add minced onion and cook, stirring, until softened and fragrant, about 2 minutes. Stir in feta, salt, and pepper. Remove from heat.

Lay one phyllo sheet on a clean surface. Brush lightly with olive oil, then top with another sheet and brush again.

Spread one-quarter of the meat mixture along the near edge of the phyllo stack. Roll tightly away from you into a log, tucking in the sides.

Place seam-side down on the prepared sheet pan. Repeat with remaining phyllo and filling to make 4 rolls. Brush tops with remaining oil.

Bake until golden brown and crispy, about 10 minutes. Let cool 2 minutes, then serve hot.
