Ingredients
- 8 oz shredded phyllo (kataifi)
- 4 tbsp butter, melted
- 1.5 cups mozzarella, shredded
- ½ cup ricotta cheese
- ½ cup honey
- 1 whole lemon (juiced)

Heat oven to 375°F. Line a sheet pan with parchment or foil.

Toss shredded phyllo with melted butter until evenly coated, then spread on the sheet pan in a thin, even layer.

Mix mozzarella and ricotta in a bowl, then dollop spoonfuls across the phyllo and gently press them in.

Bake until the phyllo is deep golden and edges curl, 8–10 minutes. Watch closely so it doesn't char.
