Ingredients
- 8 sheets phyllo sheets (thawed if frozen)
- ¾ cup feta cheese, crumbled
- 1 cup fresh spinach, finely chopped
- ¼ cup fresh parsley and dill, chopped
- 3 tbsp butter, melted
- 2 cups neutral oil for frying
- ¼ tsp black pepper to taste

Mix feta, spinach, parsley, and dill in a bowl. Season with black pepper.

Lay one phyllo sheet on a cutting board. Brush lightly with melted butter.

Spoon 2 tbsp filling near the bottom edge. Fold bottom corner up, then roll tightly into a cigar shape, tucking in the sides as you go.

Repeat with remaining phyllo sheets and filling. You should have 8 boreks.

Heat oil in a medium skillet over medium-high until a phyllo edge sizzles instantly on contact, about 2 minutes.

Fry boreks 90 seconds per side until deep golden brown and crispy. Work in batches if needed to avoid crowding.

Transfer to a paper towel–lined plate. Serve hot with lemon wedges or yogurt if desired.
