Ingredients
- 8 sheets phyllo dough (thawed if frozen)
- ¾ cup feta cheese, crumbled
- ¼ cup fresh parsley, finely chopped
- 2 tbsp fresh dill, finely chopped
- 4 tbsp butter, melted
- ¼ tsp black pepper

Mix feta, parsley, dill, and black pepper in a small bowl until combined.

Lay one phyllo sheet on a cutting board. Brush lightly with melted butter.

Place 2 tbsp filling 1 inch from the bottom edge, leaving 1 inch on each side.

Fold the left and right edges inward to cover 1 inch of filling on each side.

Roll tightly away from you into a cigar shape. Repeat with remaining phyllo.

Heat 2 tbsp butter in a large skillet over medium-high until it foams.

Pan-fry 4 borek 3 minutes per side until golden brown and crispy, then set aside.

Add remaining 2 tbsp butter and pan-fry the final 4 borek 3 minutes per side.

Serve warm with a squeeze of lemon juice if desired.
