Ingredients
- 6 count corn tortillas
- 6 oz chorizo, diced
- 1 cup shredded cheddar or Oaxaca cheese
- 2 count Roma tomatoes, diced
- ½ count white onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- 1 count lime (juiced)
- ½ cup crema or Mexican sour cream

Arrange tortillas on a sheet pan in a single layer. Brush both sides lightly with oil.

Scatter diced chorizo evenly over tortillas, then top with cheese. Bake at 400°F for 8 minutes until cheese melts and tortillas crisp.

Toss diced tomatoes and sliced onion with lime juice and a pinch of salt in a small bowl.
