Ingredients

  • 1.5 lbs russet potatoes
  • 6 oz fresh mozzarella or queso fresco, cut into 1/2-inch cubes
  • ½ cup all-purpose flour
  • 1 whole eggs
  • 3 cups neutral oil for frying
  • ½ cup guava paste or hot honey (for serving)

Instructions

    Boil potatoes in salted water until fork-tender, about 12 minutes. Drain and cool for 2 minutes.

    Mash potatoes until smooth. Stir in flour, egg, and a pinch of salt until a soft dough forms.

    Heat oil in a deep skillet to 350°F. Working in batches, roll 2 tbsp dough around a cheese cube, then gently slide into hot oil.

    Fry until golden brown and floating, turning once, about 2–3 minutes total. Drain on paper towels.
