Ingredients

  • 4 count corn tortillas
  • ¾ cup refried beans
  • ½ cup shredded cheese (cheddar or cotija)
  • 3 tbsp olive oil
  • 1 pinch salt and pepper to taste

Instructions

    Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Fry each tortilla 30 seconds per side until crispy and light golden. Drain on paper towels.

    Warm refried beans in the skillet over medium heat, stirring, for 2 minutes.

    Spread beans on each tortilla, then top with cheese while the beans are still warm.
