Ingredients

  • 200 g Gruyère or Emmental cheese, cubed
  • ½ cup all-purpose flour
  • 2 whole eggs
  • 1 cup mashed potatoes (instant or leftover)
  • 3 cups neutral oil for frying
  • ½ cup total sweet chili sauce + tartar sauce for serving

Instructions

    Set up three shallow bowls: flour in the first, beaten eggs in the second, mashed potatoes in the third.

    Toss cheese cubes in flour to coat lightly, shaking off excess.

    Dip each floured cube into egg, then press firmly into mashed potatoes until fully coated.

    Heat oil in a heavy pot to 350°F (175°C)—a cube of bread should brown in 60 seconds.

    Fry the balls 2–3 minutes until deep golden, turning occasionally so they cook evenly.
