Ingredients

  • 1 lb squid, cleaned and sliced into 1/4-inch rings
  • ¾ cup all-purpose flour
  • ½ cup mayonnaise
  • 1 clove garlic clove, minced
  • 1 whole lemon (zested + juiced)
  • 2 cups neutral oil for frying

Instructions

    Stir mayonnaise with minced garlic, half the lemon juice, and a pinch of salt until smooth.

    Pour oil into a heavy skillet and heat over medium-high until a pinch of flour sizzles on contact, ~3 minutes.

    Pat squid rings dry, toss with flour and a big pinch of salt until evenly coated, shaking off excess.

    Working in batches, slide squid into hot oil and fry 90 seconds per side until pale golden and edges curl.

    Transfer to a plate lined with paper towels and season with salt and lemon zest while hot.

    Serve calamares hot alongside aioli, lemon wedges, and fresh greens.
