Ingredients

  • 1 lb squid (cleaned, cut into rings)
  • ¾ cup all-purpose flour
  • 1 cup fresh cilantro (roughly chopped)
  • 1 whole lime (juiced)
  • 1 whole jalapeño (seeded, roughly chopped)
  • ½ cup mayonnaise
  • 3 cup neutral oil (for frying)

Instructions

    Blend cilantro, lime juice, jalapeño, mayo, and a pinch of salt until smooth and bright green.

    Pat squid rings completely dry with paper towels; any moisture will cause splatters.

    Toss squid with flour, salt, and pepper in a bowl until evenly coated.

    Heat oil in a heavy pot to 350°F over medium-high (use a thermometer for safety).

    Fry squid in batches 90 seconds until golden and edges curl—do not overcrowd the pot.
