Ingredients
- 1 lb squid (cleaned, cut into rings)
- ¾ cup all-purpose flour
- 1 cup fresh cilantro (roughly chopped)
- 1 whole lime (juiced)
- 1 whole jalapeño (seeded, roughly chopped)
- ½ cup mayonnaise
- 3 cup neutral oil (for frying)
Instructions
- 1
Blend cilantro, lime juice, jalapeño, mayo, and a pinch of salt until smooth and bright green.

Heat oil in a heavy pot to 350°F over medium-high (use a thermometer for safety).
- 5
Fry squid in batches 90 seconds until golden and edges curl—do not overcrowd the pot.
